Banana Muffins Filled With LOVE

I've been on a #bananabread kick , and have become addicted to this version!
about 4 ripe bananas
1/4 cup melted butter
1/4 cup greek yogurt
1 teaspoon vanilla
1 egg, beaten
3/4 cup brown sugar
1/4 teaspoon salt
1 teaspoon baking soda
1 1/2 cups all purpose flour
your preferred filling and additions: chocolate chips, sprinkles, walnuts, etc...
the thing about quick breads... it should be quick!
so just dump everything together and mix!
well, i guess before you dump, suggest you mash your bananas first. i personally like to use a hand blender, but a fork is just as good.
bake at 350 F for about 20 - 25 minutes or until your toothpick comes out clean.
once out of the oven, cool for about 5 - 10 minutes, and use the bottom of wooden spoon handle to poke a hole down the center of each muffin; and fill each center with your preferred filling. suggest putting your filling into a plastic bag and cut a corner to pipe into the middle.
wait for your filling to set and enjoy!

for the version pictured, i used about 1/4 cup of chocolate sprinkles to mix with the batter and filled the center with nutella. yum!
but my next combination, i think i'll go with peanut butter chips in the mix and filling the center with chocolate. an extra step for that though... you'll need to pour some hot heavy cream to melt your chocolate chips so the chocolate will stay creamy and won't completely harden when cooled. or reverse it and use chocolate chips for the batter and peanut butter for your filling! let me know your favorite combination!
