Spooky Kimchee Fried Rice

Here are the steps to a basic kimchee friend rice.

- about 2-3 cups chopped kimchee (with juices)
- 1/2 diced onion
- 3/4 to 1 can of spam, cubed
- about 3 - 4 cups cooked rice
- about 1 -2 tablespoon(s) sesame oil
- about 1 teaspoon soy sauce (optional)
Heat your pan / wok.
Saute onions. Add spam. Crisp spam to the doneness you prefer.
Add kimchee and also cook down till softened.
I like to add just a little bit of sesame oil to the kimchee.
Add your rice. Add sesame oil. Mix everything together and continue to mix.
I usually will use two spatula / spoons to mix evenly.
Adjust as you need. Add more rice if you want it less red / spicy. If it needs more flavor, add the soy sauce. Finish with a little more sesame oil.
Mix one last time and flatten out your rice.
I like to let it sit like that for a few minutes to get a little crispy on the bottom before serving.
as always, I can't emphasize enough... TASTE YOUR FOOD! a successful dish is when you like it, not because you could or couldn't follow a recipe accurately. add more kimchee, or rice, or sesame oil, etc... based on how you want to eat it
I personally like using the LITE spam instead of regular
I don't start with any oil to saute my onion and spam just to reduce oil where I can, but if you find it too dry, by all means start off with some canola oil to saute
TIPS FOR THE FACE:
Whisk two eggs well and add a little salt for flavor.
Add a little food coloring (red to make orange). I initially used carrot juice (in an effort to stay au natural), but it ended up making my egg crepe too fluffy and also gave me a salmon / coral color instead!
Heat up your pan and add some oil. Pour out your egg and make an egg crepe.
Be sure you don't cook too long that you caramelize / color your crepe!
Remove and cover your mound of rice.
Cut out your dried seaweed to make your face.
